100g (3½oz) caster sugar2 large eggs50g (2oz) unsalted butter100g (3½oz) self-raising flour3tbsp cocoa powderIcing sugar, to dustFor the filling
200g (7oz) double cream1 x 400g (14oz) can of dark cherry filling 1. Preheat oven to 200°C/180°C fan/Gas 6. Line a 20cm x 30cm (8in x 12in) Swiss roll tin with non-stick baking parchment.
2. Place the sugar, eggs and butter in a large mixing bowl and sift in the flour and cocoa. Add 2tbsp warm water and beat with an electric whisk for 1-2 minutes or until thick and smooth. Pour into the tin and smooth with a spatula. Bake for 8 minutes or until mixture is well risen and springy to the touch. Leave to cool for 1-2 minutes and then turn out onto a sheet of non-stick parchment dusted with icing sugar. Peel off the lining paper and roll up sponge with parchment inside. Cover with a damp tea towel. Leave to cool.
3. Carefully unroll the sponge and unpeel the parchment. Lightly beat the cream into soft peaks. Spread the cream over the sponge and spoon on the cherry mixture. Roll up the sponge loosely and place on a serving plate. Dust with icing sugar and cocoa and serve cut into thick, luscious slices.
